Preparation of Ingredients

    Prepare the Orata

    Clean the whole Orata under cold water, pat it dry with paper towels. Make three diagonal cuts on each side of the fish.

    Marinate the Fish

    In a bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Rub this marinade over the Orata, ensuring it gets into the cuts. Let it marinate for at least 30 minutes.

    Cook the Farro

    In a pot, combine 1 cup of farro and 3 cups of water. Bring to a boil, reduce heat, and simmer for about 25-30 minutes or until tender. Drain and set aside.

    Prepare the Cranberry Beans

    Soak cranberry beans overnight, then drain. In a pot, cover the beans with fresh water, bring to a boil, then simmer for about 1 hour or until tender. Drain and set aside.

Crapiata Preparation

    Prepare the Crapiata Sauce

    Chop the tomatoes, red onion, and red bell pepper into small pieces. In a pan, heat 2 tablespoons of olive oil over medium heat, add the chopped vegetables, and sauté for about 5-7 minutes until softened.

    Finish the Sauce

    Add chopped basil, red wine vinegar, salt, and black pepper to the sautéed vegetables. Cook for another 5 minutes, stirring occasionally. Remove from heat and set aside.

Grilling the Orata

    Prepare the Grill

    Prepare a wood fire grill to medium-high heat. Ensure the grill grates are clean and lightly oiled.

    Grill the Fish

    Place the marinated Orata on the grill. Cook for about 6-8 minutes on each side, or until the fish flakes easily with a fork.

Serving

    Plate the Dish

    On a large plate, arrange a bed of farro and cranberry beans. Place the grilled Orata on top and spoon over the crapita sauce. Garnish with chopped fresh parsley.
