Cooking Pasta

Boil Water
In a large pot, bring salted water to a boil over high heat.

Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining the pasta, reserve about 1 cup of the pasta water for later use.

Drain Pasta
Drain the spaghetti and set aside.
Preparing Sauce

Cook Pancetta
In a large skillet, cook the pancetta over medium heat until crispy, about 5-7 minutes. Remove from heat and let cool slightly.

Mix Eggs and Cheese
In a mixing bowl, whisk together the egg yolks, grated parmesan cheese, and black pepper until well combined.
Combining Ingredients

Combine Pasta and Pancetta
Add the drained spaghetti to the skillet with the pancetta and toss to combine.

Add Egg Mixture
Quickly pour the egg and cheese mixture over the hot pasta, tossing continuously to create a creamy sauce. Add reserved pasta water as needed to achieve desired consistency.

Serve immediately, garnished with fresh parsley and additional parmesan cheese if desired.
