Gnocchi Preparation

Make the Dough
In a large mixing bowl, combine the ricotta cheese and egg. Mix until smooth.

Add Dry Ingredients
Gradually add the flour and salt to the ricotta mixture, stirring gently until a soft dough forms. Be careful not to overmix.

Shape the Gnocchi
On a lightly floured surface, roll the dough into long ropes (about 1 inch in diameter). Cut the ropes into 1-inch pieces to form the gnocchi.

Form the Gnocchi
Optional: Roll each piece over a fork to create ridges, which will help hold the sauce.
Cooking the Gnocchi

Boil Water
Bring a large pot of salted water to a boil.

Cook the Gnocchi
Add the gnocchi to the boiling water. Cook until they float to the surface, about 2-3 minutes. Use a slotted spoon to remove them and transfer to a plate.

Prepare the Sauce
In a skillet over medium heat, melt the butter. Once melted, add the lemon juice, lemon zest, salt, and black pepper. Stir until well combined.

Divide the gnocchi among serving plates. Top with caviar and sprinkle with chopped chives before serving.
