Tigelle Preparation

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, baking powder, and salt. Whisk until well mixed.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 5 minutes until smooth and elastic.

Rest the Dough
Cover the dough with a damp cloth and let it rest for 30 minutes.

Shape the Tigelle
After resting, divide the dough into small balls about the size of a golf ball. Flatten each ball slightly.

Cook the Tigelle
Preheat a tigelliera or a skillet over medium heat. Cook the flattened dough pieces for about 4-5 minutes on each side, until golden brown.

Prepare Toppings
Thinly slice the prosciutto di Parma and grate the parmigiano reggiano.

Serve Tigelle
Cut the tigelle in half or leave them whole. Spread a layer of apple butter inside, add slices of prosciutto, and sprinkle with grated parmigiano reggiano.

Drizzle aceto balsamico di Modena over the assembled tigelle for added flavor.
