Pickled Lemons

Method

Fish Preparation

  1. 1

    Clean the Branzino

Rinse the whole branzino under cold water, ensuring to remove any scales or entrails. Pat dry with paper towels.

  2. 2

    Season the Fish

Sprinkle the inside and outside of the branzino with salt and black pepper. Let it sit for about 15 minutes to absorb the seasoning.

  3. 3

    Heat the Oil

In a large frying pan, heat 1 cup of olive oil over medium-high heat until it shimmers.

  4. 4

    Fry the Fish

Carefully place the seasoned branzino in the hot oil. Fry for about 4-5 minutes on each side, or until the skin is golden brown and the fish is cooked through. Remove and drain on paper towels.

Salsa Verde Preparation

  1. 5

    Combine Ingredients

In a blender or food processor, combine the parsley, basil, capers, minced garlic, lemon juice, olive oil, salt, and black pepper.

  2. 6

    Blend the Salsa

Pulse until the mixture is finely chopped but still has some texture. Taste and adjust seasoning if necessary.

Pickled Lemons Preparation

  1. 7

    Prepare the Lemons

In a jar, layer the lemon slices and sprinkle salt between the layers. Press down to release some juice.

  2. 8

    Add Water and Sugar

Mix the water and sugar in a separate bowl until dissolved, then pour it over the lemons in the jar until fully submerged.

  3. 9

    Let Pickle

Seal the jar and let it sit in the fridge for at least 24 hours before using, allowing the flavors to meld.
