Prepare Panna Cotta

Bloom the Gelatin
In a small bowl, combine 5 tablespoons of cold water and 2 tablespoons of gelatin powder. Stir gently and let it sit for about 5-10 minutes until the gelatin has fully bloomed.

Heat the Cream Mixture
In a medium saucepan, combine 2 cups of heavy cream, 1 cup of whole milk, and 1 cup of granulated sugar. Heat over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot, but not boiling.

Add Vanilla and Gelatin
Remove the saucepan from heat. Stir in 1 teaspoon of vanilla extract and the bloomed gelatin mixture until fully dissolved.

Pour into Molds
Pour the panna cotta mixture into individual serving glasses or molds. Cover with plastic wrap and refrigerate for at least 4 hours or until set.

Prepare the Berries
In a medium bowl, combine 2 cups of mixed seasonal berries, 2 tablespoons of granulated sugar, and 1 tablespoon of lemon juice. Toss gently to combine.

Let the Mixture Rest
Allow the berry mixture to sit for about 15 minutes at room temperature to let the juices release and create a syrup.

Serve
Once the panna cotta is set, remove from the refrigerator. Top each serving with the berry mixture just before serving.
