In a bowl, combine the chopped nduja, mortadella, grated Parmesan cheese, and a pinch of salt and pepper. Mix well until all ingredients are evenly combined.

Using a small spoon, carefully stuff each pitted green olive with the meat mixture, ensuring they are filled but not overstuffed.

Bread the Olives
Roll each stuffed olive first in flour, then dip in beaten eggs, and finally coat thoroughly with breadcrumbs.

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Olives
Carefully add the breaded olives to the hot oil in batches, frying for 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
