Pork Preparation

Prepare the Pork
Season the pork loin with salt and black pepper. Let it sit for about 15 minutes to absorb the seasoning.

Coat the Pork
Dredge the seasoned pork loin in flour, shaking off any excess. Then dip it into the beaten eggs, allowing excess to drip off, and finally coat it with breadcrumbs, pressing gently to adhere.

Fry the Pork
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded pork loin and fry until golden brown and cooked through, about 5-7 minutes on each side. Remove from the skillet and let rest on paper towels.
Saffron Aioli

Make the Aioli
In a small bowl, combine mayonnaise, saffron threads (soaked in a tablespoon of warm water for 5 minutes), minced garlic, lemon juice, and salt. Mix well until smooth and creamy.

In a bowl, combine chopped mustard greens and thinly sliced Honeycrisp apple.
