    Wash the lemons thoroughly under cold water to remove any dirt or pesticides. Pat them dry with a towel.

    Using a zester or a vegetable peeler, carefully remove the zest from the lemons, avoiding the bitter white pith underneath. Place the zest into a large glass jar.

    Pour the vodka over the lemon zest in the jar. Ensure that the zest is fully submerged in the vodka. Seal the jar tightly with a lid.
