For the Grilled Lamb Sausage

    Mix Lamb Sausage Ingredients

    In a large bowl, combine ground lamb, minced garlic, parsley, mint, cumin, smoked paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

    Shape Sausages

    Divide the mixture into equal portions and shape them into sausage links or patties.

    Preheat Grill

    Preheat a grill or grill pan over medium-high heat. Brush the sausages lightly with olive oil.

    Grill Sausages

    Grill the sausages for about 5-7 minutes on each side or until they are cooked through and have nice grill marks.

For the Smoked Eggplant

    Prepare Eggplants

    Preheat your oven to 400°F (200°C). Cut the eggplants in half lengthwise and score the cut sides with a knife.

    Season Eggplants

    Brush the scored sides with olive oil, sprinkle with minced garlic, salt, and black pepper.

    Roast Eggplants

    Place the eggplants cut-side down on a baking sheet and roast in the oven for about 30-35 minutes or until the flesh is soft.

    Mash and Season Eggplant

    Once done, scoop out the flesh and mash it in a bowl. Add lemon juice and mix well.

For the Piquillo Pepper Ezme

    Blend Ezme Ingredients

    In a blender or food processor, combine roasted piquillo peppers, red onion, diced tomato, olive oil, red wine vinegar, salt, and black pepper.

    Pulse Ezme

    Pulse until the mixture is well combined but still slightly chunky.

For the Herb Salad

    Combine Salad Greens

    In a large bowl, combine the mixed salad greens, parsley, and mint.

    Prepare Dressing

    In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper to create the dressing.

    Dress Salad

    Drizzle the dressing over the salad and toss gently to combine.
