Calamari

Method

Prepare the Marinara Sauce

  1. 1

    Cook the Garlic

In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  2. 2

    Add Tomatoes and Seasonings

Stir in the canned crushed tomatoes, dried oregano, salt, and black pepper. Bring to a simmer.

  3. 3

    Simmer the Sauce

Reduce heat to low and let the sauce simmer for about 15 minutes, stirring occasionally. Once done, stir in the chopped fresh basil and set aside.

Prepare the Calamari

  1. 4

    Marinate the Calamari

In a bowl, pour the buttermilk over the calamari rings and let marinate for at least 30 minutes in the refrigerator.

  2. 5

    Prepare the Breading Mixture

In a shallow dish, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

  3. 6

    Heat the Oil

In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 7

    Bread the Calamari

Remove the calamari from the buttermilk and let excess drip off. Dredge the rings in the flour mixture, ensuring they are evenly coated.

  5. 8

    Fry the Calamari

Carefully add the breaded calamari to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve

  1. 9

    Plate the Dish

Serve the fried calamari hot with a side of marinara sauce for dipping.
