    Prepare the Baguette

    Preheat the oven to 375°F (190°C). Slice the baguette into 1/2 inch thick slices.

    Toast the Bread

    Place the baguette slices on a baking sheet. Brush both sides with olive oil and sprinkle with salt. Bake for about 10-12 minutes, or until golden and crispy. Remove from oven and let cool.

Carne Cruda (Steak Tartare)

    Prepare the Beef

    Finely chop the beef tenderloin into small cubes or use a sharp knife to cut it. Place it in a mixing bowl.

    Mix Ingredients

    Add the chopped capers, shallot, Dijon mustard, Worcestershire sauce, egg yolk, salt, and black pepper to the bowl with the beef. Gently mix until well combined.

    Taste and Adjust

    Taste the mixture and adjust seasoning if necessary. Set aside while you prepare the leeks.

Melted Leeks

    Sauté the Leeks

    In a skillet, melt the butter over medium heat. Add the sliced leeks and sprinkle with salt and pepper. Cook gently, stirring occasionally, until the leeks are soft and melted, about 10-15 minutes.

Assembly

    Assemble the Crostini

    On each toasted baguette slice, place a spoonful of the melted leeks, followed by a generous portion of the steak tartare mixture.

    Garnish

    Top each crostini with shaved Parmigiano Reggiano and a sprinkle of chopped parsley.

    Serve

    Serve immediately while the crostini are still crisp and the toppings are fresh.
