Preparation of Croquettes

Mix Ingredients
In a large mixing bowl, combine the shredded chicken, diced tomato, crumbled gorgonzola cheese, finely chopped celery, garlic powder, grated parmesan cheese, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Form Croquettes
Add the beaten eggs to the mixture and stir until combined. Gradually add the breadcrumbs, mixing until the mixture holds together. If too wet, add more breadcrumbs as needed. Using your hands, form the mixture into small oval-shaped croquettes, about 2 inches long.

Chill Croquettes
Place the formed croquettes on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to help them firm up.

Heat Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until hot. You can test the oil by dropping a small piece of bread into it; if it sizzles, the oil is ready.

Fry Croquettes
Carefully place the chilled croquettes in the hot oil, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

Drain and Serve
Once cooked, remove the croquettes from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
