Herb Butter

Method

Herb Butter Preparation

  1. 1

    Make the Herb Butter

In a medium bowl, combine the softened unsalted butter, chopped parsley, thyme, dill, lemon juice, minced garlic, salt, and black pepper. Mix until well combined. Set aside.

Branzino and Vegetables Cooking

  1. 2

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 3

    Prepare the Branzino

Rinse the Branzino under cold water and pat dry with paper towels. Season the cavity and the outside of the fish with salt and black pepper.

  3. 4

    Fill with Herb Butter

Spread a portion of the prepared herb butter inside the cavity of each Branzino and also on the outside of the fish.

  4. 5

    Prepare the Vegetables

In a large bowl, toss the sliced zucchini, bell pepper, and asparagus with olive oil, salt, and black pepper until evenly coated.

  5. 6

    Arrange in Baking Dish

Place the herb buttered Branzino in a baking dish surrounded by the seasoned vegetables.

  6. 7

    Bake

Bake in the preheated oven for about 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.

  7. 8

    Serve

Remove from the oven and serve immediately, garnished with additional fresh herbs if desired.
