Preparation of Quinoa

    Rinse Quinoa

    Thoroughly rinse 1 cup of quinoa under cold water to remove any bitterness.

    Cook Quinoa

    In a medium saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed.

Sautéing Vegetables

    Prepare Vegetables

    Dice the bell peppers, zucchini, and red onion into small pieces. If using fresh corn, cut the kernels from the cob.

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onions and sauté for about 3-4 minutes until they become translucent.

    Add Remaining Vegetables

    Add the bell peppers, zucchini, and corn to the skillet. Season with 1 teaspoon of salt and 1 teaspoon of black pepper. Sauté for an additional 5-7 minutes until the vegetables are tender.

Combining Ingredients

    Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Stir in 1 cup of chopped cilantro and 2 tablespoons of lime juice. Mix well to combine all ingredients.

    Taste the mixture and adjust the seasoning with additional salt, pepper, or lime juice as desired.
