In the same skillet, leave about 1 tablespoon rendered fat (or add 1 tsp olive oil if pan is dry). Add chicken breakfast sausage links and cook 6–8 minutes, turning occasionally, until browned and cooked through (internal temp ~165°F / 74°C). Transfer to the plate with the bacon and tent with foil.
Add the diced ham to the skillet and sauté 2–3 minutes until warmed and slightly caramelized. Remove and set with other proteins.
Cook eggs
Wipe the skillet clean, reduce heat to medium-low, add 1 tbs butter. Crack 3 eggs into a bowl and whisk lightly with 1/4 tsp salt and a pinch of pepper if you prefer scrambled; or, if you want fried eggs, heat the butter until foaming then crack eggs directly into the pan. For scrambled: pour eggs into pan and gently stir with a spatula until set but still soft, about 2–3 minutes. For fried: cook until whites are set and yolks at your desired doneness, about 2–3 minutes for runny yolks, flipping for over-easy if desired. Season with remaining salt and pepper. Remove eggs and keep warm.
Tots & Toast
Cook tater tots according to package instructions for oven or air-fryer for best crispness. Oven: preheat to 425°F (220°C), spread tots in a single layer on a rimmed baking sheet, bake 18–22 minutes turning once until golden and crisp. Air fryer: 400°F (200°C) for 12–15 minutes, shake halfway. If pan-frying: heat 1 tbs olive oil in a skillet and fry tots in batches, turning, 10–12 minutes until crisp.
While tots cook, toast the bread slices until golden. Spread 1 tbs butter on the toast while hot.
Seasonal Fruit
Combine the seasonal fruit (berries, sliced apple, melon, or a mix) in a bowl. If using apples or pears, toss with 1/2 tsp lemon juice to prevent browning and brighten flavor. Chill briefly or serve immediately.
