Prep

Drain ricotta if very watery: place ricotta in a fine-mesh sieve lined with cheesecloth over a bowl for 15–30 minutes. This will give a creamier whipped texture. If ricotta is already thick, skip draining.

Whip

Place drained ricotta and softened cream cheese in a food processor or high-speed blender. Add olive oil, lemon zest, lemon juice, fine sea salt, and freshly ground black pepper. Process on medium-high until smooth and light, about 45–60 seconds, scraping down the sides once. Desired texture: spreadable, airy but still slightly textured.

Adjust

Taste and adjust seasoning: add up to 1/4 tsp more salt or a few drops of lemon juice if needed. Transfer whipped ricotta to a serving bowl and smooth the top with the back of a spoon.

Truffle Honey Topping

Combine honey and truffle oil in a small bowl or jar. Stir briskly to combine. Taste and add more truffle oil sparingly if a stronger aroma is desired (do not exceed 1/2 tsp total truffle oil for 4 tbsp honey unless you prefer a pronounced truffle flavor).

Right before serving, spoon the truffle honey over the center of the whipped ricotta, allowing some to drizzle down the sides. Sprinkle the finishing lemon zest and a very light pinch of sea salt flakes on top to brighten and contrast the sweetness.

Crispy Bread & Garnish

Preheat oven to 400°F (200°C). Arrange bread slices in a single layer on a baking sheet.

Brush each slice lightly with melted butter or olive oil on both sides. Bake until golden and crisp, 6–9 minutes, flipping once halfway through. For extra color, broil 1–2 minutes at the end—watch closely to avoid burning.

If using garlic: rub the warm toasts lightly with the cut side of the garlic clove for a faint garlic note.

To serve: place the bowl of whipped ricotta in the center of a platter or board. Arrange warm crispy bread slices around it. Finish with microgreens or small herb leaves scattered over the ricotta and toasts if using. Serve immediately so the bread stays crisp.
