Classic Spirit Serves

Straight Spirit (Neat)

Pour 60 ml (standard serving) of your chosen spirit (bourbon, rye, gin, vodka, tequila, or rum) into a clean room-temperature whisky or spirit glass. Do not add ice. Serve with a lemon or lime wedge on the side if desired.

On the Rocks

Fill a rocks glass with 4–6 ice cubes (about 8 pieces). Pour 60 ml of the chosen spirit over the ice. Garnish with an orange twist for bourbon/rye, or a lime wedge for tequila/rum. Serve immediately.

Highball (Spirit & Sparkling)

Fill a highball glass with ice. Pour 45–60 ml of chosen spirit over the ice, top with 120–150 ml sparkling water for a lighter serve (use tonic for gin or vodka to make a Gin & Tonic/Vodka Tonic). Gently stir once with a bar spoon. Garnish with a lemon wedge (vodka), lime wedge (tequila), or orange twist (bourbon).

Rum & Cola

Fill a highball glass with ice. Add 60 ml white or dark rum and top with 120–150 ml cola. Stir gently. Garnish with a lime wedge.

Prepare garnishes: cut lemon and lime into wedges, peel an orange twist. Keep bitters and mixers chilled. Place sparkling water, tonic, and cola on the bar for self-serve pours or for staff to use.

Bitters: for straight spirits or stirred cocktails, add 1–2 dashes of Angostura bitters to taste atop the spirit (commonly used with bourbon or rye).

Ice: keep ice in a clean bucket; use fresh cubed ice for each serve to avoid dilution and maintain presentation.
