Prepare proteins
Preheat a nonstick skillet over medium heat. Add turkey bacon strips in a single layer and cook 3–4 minutes per side until browned and crisp (adjust time if thicker). Transfer bacon to a paper-towel-lined plate and keep warm. In the same skillet, add chicken sausage links and 1 tsp neutral oil if needed. Cook sausages 8–10 minutes, turning occasionally, until internal temperature reaches 165°F (74°C) and evenly browned. Transfer to the plate with bacon and tent with foil.
Cook eggs any style
Wipe skillet lightly if needed and reduce heat to medium-low. Add 1 tbsp unsalted butter and let it foam. For eggs any style: a) Fried (sunny-side up): crack 3 eggs into the skillet, season with 1/4 tsp salt and 1/8 tsp pepper, cover loosely and cook 2–3 minutes until whites set and yolks still runny. b) Over-easy/medium/ hard: cook as sunny-side until whites set, then gently flip and cook 15–60 seconds more depending on desired doneness. c) Scrambled: whisk eggs with remaining 1/4 tsp salt and 1/8 tsp pepper; pour into skillet, allow to set at edges then stir gently until soft curds form, about 2–3 minutes. d) Poached: bring a shallow saucepan of water with 1 tbsp vinegar to a simmer and poach each egg 3–4 minutes for runny yolks. Choose preferred method and plate immediately with cooked bacon and sausage.
Tater Tots
Oven method (recommended for even crisp): Preheat oven to 425°F (220°C). Toss frozen tater tots with 1 tbsp vegetable oil and 1/4 tsp paprika on a baking sheet in a single layer. Bake 18–22 minutes, turning once halfway, until golden and crispy. Skillet method: heat a large nonstick skillet over medium-high, add 1 tbsp oil, arrange tots in a single layer and cook 10–12 minutes, turning occasionally until crisp on all sides. Keep warm with proteins.
Toast
Toast bread to desired darkness in a toaster or under broiler. Spread 1 tbsp butter on warm toast and cut in half on the diagonal. Serve immediately.
Fresh Fruit & Compote
Make quick fruit compote
In a small saucepan over medium heat combine 3 oz mixed berries, 1 tsp sugar, 1 tsp lemon juice and 2 tbsp water. Bring to a gentle simmer and cook 4–6 minutes, stirring occasionally, until berries break down and sauce thickens slightly. Remove from heat and let cool 2 minutes; the compote will thicken as it cools. Spoon warm compote over portioned fresh fruit (1 cup) or serve on the side.
