Preheat & mix dry

Preheat your waffle iron according to manufacturer's instructions. In a large bowl whisk together flour, sugar, baking powder, and salt until evenly combined.

Combine wet

In a separate bowl whisk milk, eggs, melted butter, and vanilla until smooth and slightly frothy.

Make batter

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few small lumps are fine. Let batter rest 5 minutes while the waffle iron finishes heating.

Cook waffles

Brush or spray the waffle iron with a little oil or melted butter. Pour batter onto the preheated iron (amount per your iron's instructions, roughly 3/4 to 1 cup). Close and cook until golden brown and crisp, about 4–6 minutes depending on your machine. Transfer waffles to a wire rack and keep warm in a 200°F (95°C) oven while you prepare fillings to keep them crisp.

Make maple-sriracha sauce

Whisk together maple syrup and sriracha in a small bowl until smooth. Taste and adjust heat or sweetness as desired (add more sriracha for heat, more maple for sweetness). Set aside.

Cook turkey bacon

In a large skillet over medium heat, add turkey bacon in a single layer. Cook until browned and crisp, about 3–4 minutes per side depending on thickness. Transfer to a paper towel–lined plate to drain and keep warm.

Prepare eggs

Reduce skillet heat to medium-low and add 1 tablespoon butter. Crack two eggs into a small bowl and gently slide into the skillet to make sunny-side-up or over-easy eggs (cook 2–3 minutes until whites set, flip if desired for over-easy and cook 30–45 seconds). Season with salt and black pepper. Alternatively scramble: whisk eggs and cook, stirring, until just set.

Assemble sandwich

Place one warm waffle on your work surface. Top with a slice of cheddar, two slices of turkey bacon, the cooked eggs, and the second slice of cheddar. Drizzle 1.5 tablespoons of the maple-sriracha sauce over the eggs/bacon (reserve remaining sauce for serving). Top with the second waffle to form a sandwich. If you want the cheese melted, return sandwich to a warm skillet for 30–60 seconds per side, pressing gently, until cheese softens and waffles get lightly toasted.

Make dressing

In a small bowl whisk together olive oil, apple cider vinegar, 1 teaspoon maple syrup, salt, and pepper until emulsified.

Toss salad

In a large bowl combine mixed greens, halved cherry tomatoes, cucumber slices, and thinly sliced red onion. Drizzle dressing over the salad and toss gently to coat. Divide onto plates alongside the waffle sandwich.
