Eggs & Breakfast Proteins
Prepare bacon
Preheat a large skillet over medium heat. Lay 3 smoked bacon strips in the cold skillet, then turn heat to medium. Cook 6–8 minutes, flipping occasionally, until crisped to your liking. Transfer bacon to a paper towel–lined plate to drain. Keep pan drippings for flavoring or wipe most out and return 1 tsp vegetable oil to the pan for sausages.
Cook eggs any style
Wipe the skillet clean if needed and reduce heat to medium-low. Add 1 tbsp unsalted butter and swirl to coat. For fried/sunny-side: crack 3 eggs into the pan, season with 1/4 tsp black pepper and a pinch of salt. Cook 2–3 minutes until whites set; cover briefly for runny yolks or longer for firm yolks. For scrambled: beat eggs with 1/2 tsp salt, pour into buttered pan, cook gently, stirring until soft curds form. For poached: bring a pot of water to a gentle simmer with 1 tbsp vinegar and poach eggs 3–4 minutes. Prepare eggs in your preferred style, keeping them warm on a plate.
Tater Tots
Preheat oven to 425°F (220°C). On a rimmed baking sheet, toss 12 frozen tater tots with 1 tbsp olive oil and 1/4 tsp smoked paprika (optional) so they are lightly coated. Spread them in a single layer and bake 18–22 minutes, turning once halfway, until golden and crispy. Keep warm.
Toast
Fresh Fruit & Compote
Make quick berry compote
In a small saucepan combine 1 cup mixed berries, 2 tbsp granulated sugar, 2 tbsp water and 1 tsp lemon juice. Bring to a gentle simmer over medium-low heat, stirring occasionally. Simmer 4–6 minutes until berries have softened and sauce has thickened slightly. Remove from heat and let cool slightly; compote will thicken as it cools.
Portion 1 cup fresh mixed fruit into a small ramekin or alongside the plate. Spoon 2–3 tbsp of warm compote over or beside the fresh fruit.
Garnish & Serve
Assemble the Big Fox Breakfast: On a plate place the buttered toast, the 3 eggs (prepared any style), 3 bacon strips and 2 chicken sausages, a serving of crispy tater tots, and the fresh fruit with compote. Sprinkle chopped parsley or chives over eggs and tots, and season with salt & pepper to taste. Serve immediately.
