Method
Prepare Fruit Purée
Make a quick strawberry purée
Place the hulled and sliced fresh strawberries (or frozen raspberries) into a small jar or blender. Muddle or blend until smooth. If you prefer a smoother texture, strain the purée through a fine mesh sieve to remove seeds. You should have roughly 1/2 oz to 3/4 oz of purée; reserve 1/2 oz for the cocktail and keep any extra refrigerated for another drink.
Build and Shake
Combine base ingredients
Into a cocktail shaker add the gin, elderflower liqueur, fresh lemon juice, simple syrup, the reserved 1/2 oz fruit purée, and a dash of aromatic bitters.
Add ice and shake
Add enough ice to the shaker to chill (about 4–6 large cubes). Shake vigorously for 12–15 seconds until well-chilled and slightly diluted.
Finish and Serve
Strain and top with rosé
Fill a chilled large wine glass or coupe with the ice specified (large cube or crushed). Double-strain the shaken mixture into the glass to remove seeds or pulp. Pour the chilled rosé wine gently over the cocktail base (about 6 oz), then float the sparkling rosé or club soda (1 oz) on top for lift and effervescence.
Garnish
Run the lemon twist around the rim and drop it into the drink. Lay the remaining sliced strawberry or a couple raspberries on top. If using, float an edible flower for a show-stopping finish.
Final touch
Give the drink one gentle stir with a bar spoon to marry the components without flattening the bubbles. Serve immediately while chilled and effervescent.
