Flatbread & Dough
Prep oven and breads
Preheat the oven to 475°F (245°C). Line 1 large baking sheet with parchment or lightly oil it. Brush each flatbread/naan lightly with 1/2 tablespoon olive oil on the top side and sprinkle a light pinch of kosher salt and black pepper over each.
If using a pizza stone, preheat the stone in the oven; otherwise use the prepared baking sheet. Place the brushed flatbreads on the sheet (or on a floured peel if using a stone) and set aside.

Prepare cheeses
Tear or slice the fresh mozzarella into 1/4-inch pieces and spread evenly across each flatbread, leaving a 1/2-inch margin at the edges. If using goat cheese, crumble it sparsely over the mozzarella for small tangy pockets.
Fruit & Cured Meat
Slice pears
Core and thinly slice the pears (about 1/8-inch thick). Arrange pear slices in an overlapping single layer on top of the cheese on each flatbread, covering most of the surface.
Add Serrano ham
Tear Serrano ham slices into pieces roughly the size of the pear slices and distribute them across the flatbreads. Some edges may curl and crisp while baking—this is desirable.
Finishing & Garnish
Rosemary honey
Chop the rosemary finely (remove woody stems) to measure about 2 tablespoons. Warm the honey gently in a small saucepan over low heat for 20–30 seconds until it becomes slightly more fluid (do not let it boil). Stir in the chopped rosemary and the lemon zest, then remove from heat and let steep for 1 minute to infuse.
Bake
Slide the prepared flatbreads into the hot oven and bake for 8–10 minutes, rotating once at mid-bake, until the mozzarella is melted, the edges are golden, and pear slices have softened. If you like some browning on the cheese, turn on the broiler for the last 45–60 seconds—watch closely to avoid burning.
Finish & serve
Remove flatbreads from the oven. Immediately drizzle about 3/4 to 1 tablespoon of the rosemary-honey mixture over each flatbread (reserve any extra for serving). Scatter any remaining fresh rosemary lightly and sprinkle red pepper flakes to taste. Tear additional Serrano ham pieces, if desired, and place them on top so they retain some tender texture. Serve hot, cut into halves or quarters.
