Muddling & Mixing

Muddle mint

Place 8 fresh mint leaves in the bottom of a sturdy mixing glass or cocktail shaker. Add the simple syrup and gently muddle the mint 6–8 times to release aromatic oils. Avoid over-muddling (which can make the mint bitter).

Add liquids

Add 2 oz light rum, 2 oz fresh peach puree, and 0.75 oz fresh lime juice to the muddled mint in the shaker or mixing glass.

Shake with ice

Fill the shaker with ice (about 4–6 medium cubes) and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

Assemble & Finish

Prepare glass

Fill a highball or Collins glass about three-quarters full with crushed ice (approximately 1 cup).

Strain

Double-strain the shaken mixture into the prepared glass over the crushed ice to remove mint bits and any peach solids. If you prefer more texture, use a single strainer.

Top with soda

Top the drink with about 2 oz chilled club soda. Gently stir once or twice with a bar spoon to combine, moving from bottom to top to lift mint and peach flavor throughout the glass.

Garnish and serve

Garnish with a fresh mint sprig and a peach slice. Clap the mint between your hands first (optional) to release its aroma, then tuck it into the glass. Serve with a straw and enjoy.
