Cocktail base

Method

Prepare glass & sugar

1

Dissolve sugar

Place 1 teaspoon demerara sugar in an Old Fashioned (rocks) glass. Add 0.25 oz (about 7–8 ml) warm water to the sugar and stir with a bar spoon until the sugar is fully dissolved, creating a thin syrup. If you prefer, muddle the sugar with the water to speed dissolution.

Build the cocktail

2

Add 3 dashes of Angostura bitters to the sugar syrup in the glass. Pour in 2 oz Elijah Craig bourbon.

3

Add one large ice cube (or fill the glass with several chilled ice cubes). Stir gently with a bar spoon for 20–30 seconds until the drink is well chilled and slightly diluted — you should see the outside of the glass become cold and a small amount of dilution on the spoon.

Garnish & finish

4

Express the orange peel over the drink: hold the peel with the skin side down above the glass and give it a sharp twist to release the oils, then run the peel around the rim and drop it into the drink.

5

Add one Luxardo cherry (or maraschino) to the glass. Serve immediately with a short stirring spoon or a single straw if desired.
