Salsa Verde
Place the tomatillos, cilantro, chopped onion, garlic cloves, jalapeño (or serrano), lime juice, olive oil, salt, and pepper into a food processor or blender.
Pulse 6–8 times until the mixture is coarsely blended but still has some texture. Scrape down the sides and pulse again once or twice if necessary. Taste and adjust salt or lime as needed.
Transfer salsa to a bowl, cover, and refrigerate for at least 15 minutes to allow flavors to meld (can be made up to 24 hours ahead).
Pickled Serrano Peppers
In a small saucepan combine white vinegar, water, sugar, and kosher salt. Bring to a gentle simmer over medium heat, stirring until the sugar and salt dissolve (about 2–3 minutes). Remove from heat.
Place the sliced serrano peppers, smashed garlic clove, and black peppercorns into a clean heatproof jar or bowl.
Pour the hot brine over the peppers, making sure they are fully submerged. Let cool to room temperature (about 20–30 minutes).
Cover and refrigerate for at least 1 hour before using; flavor improves after 4 hours and keeps up to 2 weeks refrigerated.
Melon & Assembly
Place the melon cubes in a mixing bowl. Drizzle with 1 tsp olive oil and 1 tsp lime juice, then gently toss to coat. Season with sea salt and freshly ground black pepper.
Spoon 1/3 to 1/2 cup of the salsa verde over the melon (adjust to taste). Drain a few rings of the pickled serrano peppers and scatter them over the melon and salsa—use more or fewer depending on heat preference.
Finish with microgreens or thinly sliced basil for freshness and a small drizzle of olive oil if desired.
Serve immediately as a bright appetizer, salad, or accompaniment to grilled fish or pork. Leftover components can be stored separately: salsa 3–4 days refrigerated, pickled peppers up to 2 weeks, dressed melon for same-day service only.
