Method
Lavender Simple Syrup
Make syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Add 2 tablespoons dried culinary lavender and 1 teaspoon fresh lemon zest. Heat over medium, stirring occasionally, until sugar fully dissolves and mixture just reaches a gentle simmer (about 4–5 minutes). Do not boil vigorously — gentle simmer is sufficient to extract flavor without bitterness.
Strain the syrup through a fine mesh sieve or cheesecloth into a heatproof container, pressing on the solids to extract liquid. Discard solids. Cool syrup to room temperature, then refrigerate until cold (at least 30 minutes). Yields about 1 cup of syrup.
Lemonade Base
Juice lemons
While the syrup cools, juice fresh lemons to measure 1 cup of lemon juice (approximately 4–6 medium lemons). Strain seeds and excess pulp if desired for a smoother beverage.
In a 1.5–2 quart pitcher, combine the 1 cup fresh lemon juice, 3 cups cold water, and the cooled lavender simple syrup. Start by adding 3/4 to 1 cup of syrup, taste, and adjust depending on desired sweetness and lavender intensity. Stir to combine.
Add 1 teaspoon fine sea salt to the lemonade mixture and stir until dissolved — the salt brightens flavors and balances sweetness.
Chill and finish
Add 4 cups of ice to the pitcher or to individual serving glasses. Pour the lemonade base over the ice, leaving room to top with sparkling water. Stir gently to chill.
Just before serving, gently pour 2 cups chilled sparkling water into the pitcher (or top each glass individually) to preserve effervescence. Stir once lightly to incorporate.
Seasoning & Garnish
Taste the finished lemonade and adjust: add up to 2 tablespoons extra syrup if you prefer sweeter, or a pinch more salt (up to 1/4 teaspoon) if brightness needs it. Be conservative — salt should be subtle.
Serve immediately to enjoy the sparkling fizz. Store leftover lemonade (without sparkling water) in the refrigerator for up to 48 hours; add sparkling water just before serving.
