Chill glass and ingredients

Place a flute or coupe in the refrigerator or freezer for at least 10 minutes to chill. Keep the sparkling wine or Champagne well chilled (around 45–50°F / 7–10°C).

Pour the crème de cassis into the bottom of the chilled flute. Use 1/2 ounce (about 15 ml) per serving as a guideline; adjust slightly to taste for sweeter or drier results.

Slowly and carefully top with 4 ounces (about 120 ml) of chilled sparkling wine or Champagne. Pour gently down the side of the glass or over the back of a spoon to preserve bubbles and reduce foaming.

Garnish: Express a lemon twist over the surface to release oils and drop it into the glass, or drop in 1–2 fresh raspberries or blackcurrants for a pretty presentation and slight fruit flavor.

Serve immediately while the bubbles are lively. Offer a small spoon if you included whole berries for easier removal.

Alternative (Non‑Alcoholic) Version

Chill glass and ingredients: refrigerate the flute and keep the sparkling water or non‑alcoholic sparkling wine cold.

Pour 1/2 ounce (15 ml) blackcurrant syrup or cordial into the bottom of the chilled flute.

Top slowly with 4 ounces (120 ml) chilled sparkling water or non‑alcoholic sparkling wine, pouring gently to preserve effervescence.

Garnish with a lemon twist or a fresh berry and serve immediately.
