Prepare glass

Choose a large wine glass or a stemmed spritz glass. Fill it three-quarters full with fresh ice to chill the glass thoroughly.

Build the spritz

Pour 3 oz Lillet Rosé into the glass over the ice. Add 0.5 oz fresh grapefruit juice and 2 dashes of grapefruit bitters if using. Gently stir once with a bar spoon to combine these base ingredients.

Top with bubbles

Slowly add 2 oz sparkling wine down the inside of the glass to preserve effervescence. If you prefer a lighter spritz, add up to 0.5 oz tonic water or club soda on top instead of (or in addition to) part of the sparkling wine. Gently lift the spoon and give one soft stir to integrate without flattening the bubbles.

Garnish & Serve

Express the oils of a grapefruit wheel over the glass by holding it skin-side down and giving it a light squeeze, then drop the wheel into the drink or set it on the rim. Optionally slap a mint sprig between your hands to release aroma and tuck it alongside the grapefruit.

Serve immediately while sparkling. Recommend serving with a small straw and a cocktail napkin. Adjust balance to taste: more grapefruit juice for tartness, more sparkling for dryness, or an extra dash of bitters for complexity.
