Prepare and freeze peaches

Peel, pit, and slice the peaches into 1/2-inch wedges. Arrange slices in a single layer on a parchment-lined baking sheet and freeze until solid, at least 6 hours or preferably overnight.

Make peach syrup

In a small heatproof bowl, combine the granulated sugar and hot water (about 2 tablespoons). Stir until the sugar dissolves completely to make a simple syrup. While still warm, toss the syrup with 1 1/2 cups of the frozen peach slices and the fresh lemon juice. Mix gently so the peach slices start to glaze with syrup. Return to the freezer for 20–30 minutes until the peach pieces are very cold but not rock-solid.

Freeze rosé

Pour the bottle of rosé into a shallow, freezer-safe baking dish (9x13 or similar) and place in the freezer for 3–4 hours until mostly slushy around the edges but still scoopable. Stir gently every 45–60 minutes to encourage even freezing and to create a granular, slushy texture. If short on time, place wine in the freezer for 1–2 hours and then combine with ice in a blender (see blending step).

Combine peach base and rosé

When both the peach pieces (glazed) and the rosé are very cold, transfer the peach pieces and any leftover syrup to a high-powered blender. Add the partially frozen rosé (pour or scrape the slushy wine into the blender) and the optional peach schnapps if using. Blend in short bursts until a smooth, scoopable slush forms. If the mixture is too thick or stubborn, add up to 1/2 cup of club soda or 1/4 cup additional rosé to reach desired texture. If too thin, add a few more frozen peach slices or a handful (1/2 to 1 cup) of ice and re-blend.

Finish & Garnish

Serve immediately: scrape the frosé into chilled coupe glasses or tall glasses. Top with a splash of club soda if you want a lighter, fizzy drink (about 1–2 tablespoons per serving). Garnish each glass with a thin peach slice on the rim and a mint sprig. If making ahead for a party, store the blended frosé in a shallow, freezer-safe container and freeze until firm; let sit at room temperature 8–12 minutes and stir/scrape to loosen before serving.

Adjust sweetness & tips: taste and adjust sweetness before serving. If more sweetness is needed, dissolve 1 teaspoon of sugar in 1 tablespoon hot water and stir into the frosé. For a stronger peach flavor, muddle one additional fresh peach with the sugar syrup in step 2 or increase peach schnapps by 1 teaspoon.
