Sugar rim

If you want a sugared rim, pour the teaspoon of sugar onto a small plate. Run the grapefruit or lemon wedge around the glass rim to moisten, then dip the glass rim into the sugar and twist to coat evenly. Set the glass aside to dry while you prepare the cocktail.

Juice and sweeten

Measure 3 fl oz fresh grapefruit juice and 0.5 fl oz fresh lemon juice into a mixing glass or cocktail shaker. Add 0.5 fl oz simple syrup. Using fresh-squeezed juice gives the best bright flavor.

Chill and balance

Add about 1/2 cup of ice to the shaker to chill mixture quickly. If using the spirit option, add 1.5 fl oz gin now. Secure the shaker lid and shake vigorously for 10–12 seconds until well chilled and slightly frothy.

Strain and top

Fill the prepared serving glass with fresh ice (use the remaining 1/2 cup of the ice portion if you split it). Double-strain the shaken mixture into the glass to remove ice shards and pulp. Gently top with 2 fl oz chilled club soda or sparkling water — pour slowly to preserve bubbles and avoid overflow.

Garnish

Express the oils of a grapefruit twist over the drink by holding the twist skin-side down and bending it quickly above the surface, then drop it in as garnish. Alternatively, rest a thin grapefruit slice on the rim and add a mint sprig for aroma.

Serve immediately while fizzy. Taste and adjust: if it’s too tart, add 1/4 fl oz more simple syrup; if too sweet, squeeze an extra 0.25 fl oz lemon juice for brightness.
