Board - cheeses & charcuterie

Method

Board - cheeses & charcuterie

1

Bring cheeses to serving temperature

Remove all cheeses from refrigeration 30–60 minutes before plating so flavors and textures open up. Soft cheeses (brie) should be slightly cool but not fridge-cold; aged and firm cheeses can sit closer to 45–60 minutes.

2

Slice and portion cheeses

Using a clean cheese knife, cut the firm cheese into small wedges or bite-size cubes and place in one area of the board. For brie or triple crème, serve whole or half with a small knife to encourage spreading. Crumble or chunk the blue cheese into a small pile or bowl to contain stronger aroma.

3

Arrange cured meats

Fold or roll slices of prosciutto and lay them in loose ribbons; stack or fan salami and soppressata. Place meats in separate clusters around the cheeses so guests can mix and match. Aim for visual balance and variety of textures.

4

Place pickled items and jam

Spoon the jam into a small ramekin and place near a soft cheese like brie or the aged cheddar. Spoon cornichons and caperberries into separate small bowls or pile them next to meats to provide briny contrast.

5

If including honeycomb, place a small chunk on the board near the milder cheese (brie or triple crème) so guests can drizzle or press pieces onto cheese and crackers. Keep honeycomb in a shallow dish or on a clean piece of parchment to avoid stickiness on the board.

Accompaniments & crackers

6

Prepare lavash

Preheat oven to 350°F (175°C). Lightly brush lavash with 1 tablespoon olive oil, place on a baking sheet, and bake 4–7 minutes until just crisp and golden at the edges. Let cool completely and break into long strips or triangles. Alternatively serve lavash room temperature without toasting.

7

Arrange crackers, fruit, and nuts

Fan crackers in small stacks around the board. Place sliced apples or pears in a small cluster (toss slices briefly in a squeeze of lemon if not serving immediately to reduce browning). Scatter toasted nuts in a small pile or in a tiny bowl for easy grabbing.

Garnishes & finishing

8

Finish board

Tuck fresh herb sprigs between items for color and aroma. Sprinkle a light grind of black pepper over soft cheeses if desired. Ensure there are small spoons or spreaders for jam and honeycomb and toothpicks for cornichons and caperberries.

9

Serve immediately once assembled. Provide guests with small plates and cheese knives. If the board will sit out for more than 2 hours, keep soft cheeses refrigerated until 15–30 minutes before serving to maintain food safety.
