Prepare the Fries

Peel and cut the Russet potatoes into thick fries. Rinse them under cold water to remove excess starch. Soak the fries in cold water for at least 30 minutes, then drain and pat dry.

Fry the Potatoes

In a large pot, heat duck fat over medium-high heat. Once the fat is hot, fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt and black pepper.

Prepare the Duck Green Chile

In a sauté pan, combine the confit duck and roasted green chiles. Heat over medium until warmed through. Stir occasionally to ensure even heating.

On a serving plate, layer the hot fries, followed by a generous amount of duck green chile mixture. Top with cheese curds and pickled jalapeños. Serve immediately.
