Blue Cornbread

Method

Instructions

1

Prepare the Oven

Preheat your oven to 400°F (200°C). Grease a 9-inch square baking pan.

2

Mix Dry Ingredients

In a large bowl, whisk together the blue cornmeal, all-purpose flour, baking powder, and salt.

3

Combine Wet Ingredients

In another bowl, whisk together the milk, honey, eggs, and melted butter until well combined.

4

Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

5

Bake

Pour the batter into the prepared baking pan and smooth the top. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

6

Serve

Allow the cornbread to cool slightly before cutting into squares. Serve warm with crema, wojapi, and Pueblo chile on the side.
