Burger Patties

Form and season patty

Gently combine ground beef, Worcestershire sauce, garlic powder, 1/2 tsp kosher salt, and 1/4–1/2 tsp freshly ground black pepper in a bowl. Do not overwork. Form into a 1/2 lb (approximately 3/4-inch thick) patty slightly wider than the Kaiser roll. Make a shallow dimple in the center with your thumb to prevent doming.

Rest before cooking

Let the formed patty rest at room temperature for 10 minutes while you prepare the bacon and bun. This helps even cooking.

Bacon & Cheese

Cook bacon

Heat a skillet over medium heat. Add the bacon strips and cook 3–4 minutes per side until crisp but still slightly pliable. Remove to a paper towel-lined plate to drain. Reserve a little bacon fat in the pan for flavor (optional).

Prepare cheese

Have the two slices of sharp cheddar ready. If using thick-cut cheddar, you can place them on a sheet of parchment to melt quickly when the patty is nearly done.

Buns & Toppings

Toast Kaiser roll

Butter the cut sides of the Kaiser roll with the softened butter. Toast cut-side down in a skillet over medium heat (or under a broiler) 1–2 minutes until golden-brown. Set aside.

Prep toppings

While the patty cooks, slice tomato and onion thinly and wash/dry lettuce leaf. Arrange pickle slices.

Cooking the Burger

Sear the patty

Heat a heavy skillet or cast-iron pan over medium-high heat and add 1 tsp vegetable oil (or use reserved bacon fat). When shimmering, place the patty in the pan. Cook undisturbed 3–4 minutes to develop a brown crust.

Flip and finish

Flip the patty and cook 3–4 more minutes for medium (adjust time for desired doneness). During the last 60–90 seconds of cooking, place the two cheddar slices on the patty and cover the pan with a lid or tent with foil to melt the cheese. Season the top with a pinch of remaining kosher salt and black pepper.

Assembly & Sauce

Mix optional sauce

In a small bowl combine mayonnaise, yellow mustard, ketchup, and hot sauce. Taste and adjust; this yields a light burger spread.

Assemble the burger

Spread the sauce on both toasted bun halves as desired. Place the lettuce leaf on the bottom bun, add tomato slices, then the cheesy patty. Lay the four bacon slices (stacked or crisscrossed) on top of the cheese. Add red onion slices and pickles. Crown with the top bun.

Serve

Serve immediately while hot with fries or a side salad.
