Prepare peaches
Wash the peaches. Using a sharp knife, cut around each peach to split at the seam, twist halves apart and remove the pit. Slice each half into 1/2-inch thick slices (about 6–8 slices per peach). If peaches are very ripe and soft, slice gently and consider leaving some wedges slightly larger so they hold shape.
Assemble salad
In a large bowl, combine the mixed greens, cucumber slices, radish slices, and about three-quarters of the red onion. Gently fold in the peach slices, reserving a few slices per serving for garnish. Sprinkle the crumbled goat cheese, toasted pecans, and torn basil leaves over the top. Season lightly with flaky sea salt and freshly ground black pepper.
Dressing
Make the dressing: In a small bowl or jar, whisk together the white balsamic vinegar, honey, Dijon mustard, minced shallot, and fresh lemon juice until smooth. Slowly drizzle in the extra-virgin olive oil while whisking (or put the lid on the jar and shake vigorously) until the dressing is emulsified. Season with kosher salt and freshly ground black pepper. Taste and adjust sweetness or acidity as needed (add a pinch more honey or a splash more vinegar).
Dress the salad: Right before serving, drizzle about half of the dressing over the salad and gently toss to coat the ingredients evenly. Add more dressing to taste, but avoid overdressing; you want the peaches and goat cheese to shine. Garnish each serving with reserved peach slices and a light sprinkle of flaky sea salt and extra torn basil if desired.
