Roast the Beets

Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes, or until tender. Allow to cool, then peel and slice into rounds.

Prepare the Dressing

In a small bowl, whisk together olive oil, maple syrup, apple cider vinegar, salt, and pepper until well combined.

Assemble the Salad

In a large bowl, toss the arugula with the dressing until evenly coated. Arrange the dressed arugula in the center of a serving dish. Place the sliced roasted beets around the greens.

Garnish

Crumble the goat cheese over the salad and sprinkle with pecans. Drizzle with a little more olive oil if desired.
