Wonton Filling
Press and crumble tofu: wrap the tofu in a clean kitchen towel and press for 10–15 minutes to remove excess moisture. Crumble the pressed tofu into small pieces with your hands or a fork.
Cook vegetables: heat 1 tsp vegetable oil in a skillet over medium-high heat. Add mushrooms and sauté 2–3 minutes until they begin to soften. Add garlic and ginger and sauté 30 seconds until aromatic. Add carrot and cabbage and cook 2–3 minutes until vegetables are softened but still have some bite.
Combine filling: transfer cooked vegetables to a bowl with the crumbled tofu. Add 2 tbsp soy sauce, 1 tsp sesame oil, 1 tsp toasted sesame oil (optional), 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp sugar and 1 tsp cornstarch. Add the sliced scallions. Mix thoroughly to combine. Taste and adjust seasoning — add a little more soy sauce or salt if necessary. Let mixture cool to room temperature (10–15 minutes) so wrappers won’t get soggy.
Wonton Assembly & Cooking
Prepare workstation: lay out wonton wrappers on a clean surface. Keep a small bowl of water handy for sealing wrappers.
Filling and folding (basic triangle)
Place about 1 teaspoon (level) to 1.5 teaspoons of filling in the center of each wonton wrapper. Dip your finger into the water and moisten the edges of the wrapper. Fold the wrapper into a triangle by bringing one corner over to the opposite corner, pressing to seal and remove all air. Optional: bring the two outer corners together and press to form a traditional wonton shape, sealing with a dab of water.
Three cooking options (choose one): - Boiling: Bring 500 ml vegetable broth or water to a gentle boil in a saucepan. Add wontons in small batches (do not overcrowd). Stir gently to prevent sticking. Cook 3–4 minutes until wrappers appear translucent and filling is heated through. Remove with a slotted spoon. - Steaming: Arrange wontons in a single layer in a steamer basket lined with parchment or cabbage leaves to prevent sticking. Steam over simmering water for 6–8 minutes until wrappers are tender and filling is hot. - Pan-frying (potstickers): Heat 2 tbsp neutral oil in a nonstick skillet over medium-high. Add wontons in a single layer and fry 2–3 minutes until bottoms are golden. Carefully pour in 60 ml water (about 4 tbsp), cover immediately, reduce heat to medium-low and steam 4–5 minutes until water has evaporated and wrappers are cooked. Uncover and cook 1 more minute to re-crisp bottoms.
Finish: transfer cooked wontons to a serving plate. If desired, drizzle with a few drops of toasted sesame oil for aroma.
Dipping Sauce
Make sauce: Whisk together 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp chili oil or a pinch of chili flakes, 1/2 tsp sesame oil, 1/2 tsp honey or sugar and 1/2 tsp fresh lime juice (if using). Taste and adjust balance of salty, sour and sweet. Serve in a small bowl alongside the wontons.
