Prepare cornstarch slurry

In a small bowl, whisk together the cornstarch and 2 tablespoons of the milk from the measured milk until smooth and lump-free; set aside.

In a medium saucepan, combine the remaining milk (1 14/16 cups) and heavy cream. Warm over medium heat until it barely simmers and small bubbles form at the edges, stirring occasionally — do not boil.

While the milk warms, whisk the egg yolks, granulated sugar, and fine salt in a heatproof bowl until pale and slightly thickened (about 1–2 minutes).

Temper the yolks by slowly pouring one-third of the hot milk mixture into the yolks while whisking continuously to raise their temperature without scrambling.

Return the tempered yolk mixture to the saucepan with the remaining hot milk and set over medium-low heat. Add the cornstarch slurry and cook, stirring constantly, until the custard thickens and coats the back of a spoon, about 3–5 minutes. Do not let it boil vigorously.

Remove from heat and stir in the vanilla extract. Strain the custard through a fine-mesh sieve into a clean bowl to ensure absolute smoothness.

Cover the surface with plastic wrap (touching the custard) to prevent a skin from forming. Chill in the refrigerator until fully set and firm, at least 3 hours but preferably 4 hours or overnight.

Assembly & Frying

Line an 8x8-inch square pan (or similar) with plastic wrap, leaving an overhang to lift the custard out. Pour the chilled, set custard into the prepared pan and smooth the top with a spatula to an even thickness about 3/4-inch to 1-inch. If custard is very firm, let sit 5–10 minutes at room temperature for easier cutting.

Using a sharp knife, cut the custard into 12 (or desired number) squares or rounds of roughly equal size. Lift pieces out carefully using the plastic wrap and transfer to a parchment-lined tray. Keep chilled until ready to bread.

Set up a three-station breading station: (1) flour in a shallow dish; (2) whisk eggs with 2 tablespoons milk in a second shallow dish to make an egg wash; (3) combine panko and dry breadcrumbs in a third shallow dish. For extra crispness, pulse panko briefly in a food processor for slightly smaller flakes.

Working with chilled custard pieces, dredge each piece first in flour (shake off excess), then dip into the egg wash, allowing excess to drip back into the dish, and finally press into the panko mixture to fully coat. For a thicker crust, double-coat by repeating egg wash and panko step. Place coated pieces on a chilled tray and return to refrigerator for 10–15 minutes to firm up the crust.

Pour oil into a deep heavy-bottomed pot or Dutch oven to a depth of about 2 inches (approx. 3–4 cups depending on vessel). Heat the oil over medium heat to 350°F (175°C). If you don't have a thermometer, test with a small breadcrumb — it should sizzle and brown in about 30–45 seconds.

Fry the coated custard pieces in batches (do not overcrowd) for 1 to 1 1/2 minutes per side, turning carefully with a slotted spoon or tongs so they brown evenly to a deep golden color. The goal is a crisp, golden exterior while the interior remains cool and creamy; total fry time is short to avoid melting the custard.

Remove fried custard to a wire rack set over a baking sheet or paper towels to drain. If desired, sprinkle immediately with a pinch of sea salt flakes for contrast. Allow to rest 1–2 minutes to firm the crust, then transfer to a plate for serving.

Dust the fried custard generously with powdered sugar just before serving. If using, grate a little citrus zest over the top to brighten the flavor.

Serve the fried custard warm (the exterior should be hot and crisp while the inside remains cool to slightly warm) with additional powdered sugar on the side. Enjoy immediately for best texture.
