Prepare glass

If desired, chill the serving glass in the freezer for 10–15 minutes to keep the float colder longer. For a warm glass, add 1/4 cup crushed ice to the bottom and swirl briefly, then discard the melting ice before proceeding.

Add ice cream

Place 2 generous scoops of vanilla ice cream into a tall 12–16 oz glass. Position the scoops so they sit slightly above the rim for a classic look and to allow foaming.

Pour root beer

Hold the chilled 12 oz bottle or can of Greenman Natural Root Beer at a slight angle and slowly pour it down the side of the glass until the liquid reaches just below the rim. Pour gently to control foam; stop briefly if the foam rises too high, then continue pouring to fill.

Finish and garnish

Let the foam settle for 10–20 seconds. Add a small dollop (about 1 tablespoon) of whipped cream on top if using, and place a maraschino cherry atop the whipped cream or directly on the ice cream. Serve immediately with a long spoon and a straw.

Notes

For extra creaminess, allow the ice cream to soften 2–3 minutes at room temperature before scooping. To avoid overflow when using very cold root beer, pour in two stages (half, wait for foam to settle, then top off).
