Risotto Base
Prepare broth
Warm the broth in a saucepan over low heat and keep it at a gentle simmer. This helps the rice cook evenly.
Toast rice
Add the Arborio rice to the pan and stir for 1–2 minutes so each grain is coated and slightly toasted.
Deglaze
Pour in the white wine and stir until it is mostly absorbed.
Cook risotto
Add 1/2 cup of the hot broth and stir frequently until the liquid is absorbed. Continue adding broth, 1/2 cup at a time, stirring often and letting it absorb before adding more. This should take 18–22 minutes total until the rice is tender but still slightly al dente and creamy.
Finish risotto
Remove from heat, stir in the remaining 1 tbs butter, grated Parmesan, lemon zest, salt, and pepper. Spread the risotto on a rimmed baking sheet to cool to room temperature (about 20–30 minutes) — chilling slightly will help form balls.
Crab Filling & Mix-ins
While risotto cools, combine the picked crab meat, corn kernels, chives, ricotta, lemon juice, 1/4 tsp salt, and 1/4 tsp pepper in a bowl. Gently fold to combine, keeping some lumps of crab intact for texture. Taste and adjust seasoning. If mixture is very wet, refrigerate for 10–15 minutes to firm up.
Once risotto is cool enough to handle, fold about three-quarters of the crab mixture into the risotto (reserve a few tablespoons for garnish or a small interior surprise). Mix gently but thoroughly so the crab and corn are evenly distributed. Chill the combined mixture for 15–30 minutes to make rolling easier.
Forming & Coating
Set up a breading station with three shallow bowls: flour (seasoned lightly with a pinch of salt), beaten eggs, and breadcrumbs. Scoop about 2 tbs of the chilled risotto-crab mixture and shape into a compact ball about 1.5–2 inches in diameter. If desired, press a small spoonful (1 tsp) of the reserved crab mixture into the center before sealing for a pronounced crab core.
Coating & Frying
Pour enough oil into a deep skillet or heavy pot to reach about 1.5–2 inches deep and heat to 350°F (175°C). If you don't have a thermometer, test by dipping a wooden spoon handle — small bubbles should form steadily.
Fry the arancini in batches (do not overcrowd) for 3–4 minutes, turning occasionally, until golden brown and heated through. Use a slotted spoon to transfer to a paper-towel-lined rack. If oil temperature drops, allow it to recover between batches to keep arancini crisp and prevent oil absorption.
Finish with a light sprinkle of salt while still hot.
Corn Lemon Oil (Finishing Oil)
While frying, combine the neutral oil and corn kernels in a small saucepan over low heat. Warm gently (do not fry) for 4–5 minutes to infuse the oil with corn flavor and soften the kernels. Remove from heat and let cool slightly, then strain the oil through a fine-mesh sieve into a small bowl, pressing the kernels to extract oil. Discard solids or reserve a teaspoon for garnish.
Stir the lemon zest, lemon juice, and 1/8 tsp salt into the strained oil. Taste and adjust lemon or salt. Keep at room temperature; it will be used as a finishing drizzle.
Plating & Garnish
Arrange 2–3 arancini per serving on plates. Drizzle each lightly with the corn lemon oil (a teaspoon or two per plate). Scatter microgreens or baby arugula around, add a pinch of extra lemon zest and a light dusting of grated Parmesan if using.
Serve immediately while hot and crisp. Provide lemon wedges on the side if you like extra brightness.
