Method
Preparing the Olives

Combine Ingredients
In a medium bowl, combine the mixed olives, minced garlic (adjust to taste), fresh rosemary sprigs, olive oil, red pepper flakes, salt, and black pepper.

Heat the Mixture
Transfer the olive mixture to a small saucepan and heat over medium-low heat. Gently stir the mixture to combine and allow the flavors to infuse for about 5-7 minutes, being careful not to let the garlic burn.

Remove from Heat
Once heated, remove the saucepan from the heat and let the olives sit for a few minutes to cool slightly and absorb the flavors.
Preparing the Cheese

Add Mozzarella
While the olives are cooling, prepare the fresh mozzarella. If using larger mozzarella balls, cut them into bite-sized pieces. Add the mozzarella to the olive mixture and gently toss to combine.
Serving

Plate and Serve
Transfer the warm olives and mozzarella to a serving dish. Drizzle with additional olive oil if desired, and garnish with extra rosemary sprigs. Serve warm with crusty bread or crackers.
