Cooking Quinoa

    Rinse 1 cup of quinoa under cold water to remove any bitterness. In a saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Fluff Quinoa

    After sitting, fluff the quinoa with a fork and set aside.

Sautéing Vegetables

    Prepare Vegetables

    Chop the bell peppers, zucchini, cherry tomatoes, and red onion into small, even pieces.

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped vegetables and sauté for 5-7 minutes until they are tender and slightly caramelized.
