Preparation

    Prepare the Steak

    Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes before cooking. This ensures even cooking.

    Season the Steaks

    Pat the steaks dry with paper towels. Rub both sides of the steaks with olive oil, then generously season with salt and black pepper on both sides.

Cooking

    Heat the Pan

    Heat a cast-iron skillet or frying pan over medium-high heat until it’s smoking hot.

    Sear the Steaks

    Place the ribeye steaks in the hot pan without overcrowding. Sear for about 4-5 minutes on one side until a deep brown crust forms.

    Flip and Add Aromatics

    Flip the steaks over and add the garlic cloves and rosemary to the pan. Continue to cook for another 3-4 minutes for medium-rare, or longer for desired doneness.

    Baste the Steaks

    Add the butter to the pan. As it melts, use a spoon to baste the steaks with the melted butter and juices from the pan for enhanced flavor.

Finishing

    Rest the Steaks

    Remove the steaks from the pan and place them on a cutting board. Tent them loosely with aluminum foil and let them rest for 5-10 minutes to allow the juices to redistribute.

    Serve

    Slice against the grain and serve the ribeye steaks with the garlic and rosemary drizzled over the top.
