Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick, and soak them in cold water for at least 30 minutes to remove excess starch.

Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with oil.

Season the Fries
Drain the soaked potatoes and pat them dry with a clean kitchen towel. In a large bowl, toss the potatoes with olive oil, chopped rosemary, minced garlic, salt, and black pepper until well coated.

Bake the Fries
Spread the seasoned potatoes in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Add the Milk
Slowly pour in the milk while continuously whisking to avoid lumps. Cook the mixture, stirring frequently, until it thickens, about 5 minutes.

Incorporate the Cheese
Reduce the heat to low and add the shredded Fontina cheese, garlic powder, and salt. Stir until the cheese is completely melted and the sauce is smooth. Keep warm until ready to serve.
