Fries Preparation

Prepare the Potatoes
Wash and scrub the russet potatoes thoroughly. Cut each potato into evenly sized fries, about 1/4 inch thick.

Season the Potatoes
In a large bowl, toss the cut fries with olive oil, chopped fresh rosemary, minced garlic (you can mince the garlic cloves using a knife or garlic press), salt, and black pepper until well coated.

Bake the Fries
Preheat the oven to 425°F (220°C). Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for 30-35 minutes, flipping halfway through, until they are golden brown and crispy.
Fontina Dipping Sauce Preparation

Melt the Fontina Cheese
In a small saucepan over medium heat, combine the fontina cheese and heavy cream. Stir continuously until the cheese is completely melted and the mixture is smooth.

Add Seasoning
Stir in garlic powder, grated Parmesan cheese, and season with salt and black pepper to taste. Continue to cook for another 2-3 minutes until everything is well combined and heated through.

Serve
Remove the dipping sauce from heat and transfer it to a serving bowl. Serve warm alongside the crispy rosemary-garlic fries.
