Prepare Rhubarb Filling

Combine Ingredients
In a large mixing bowl, combine the chopped rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss until the rhubarb is well coated.

Allow the mixture to sit for about 15 minutes to let the rhubarb release its juices.
Make Brown Sugar Streusel

Mix Dry Ingredients
In a separate bowl, mix together the all-purpose flour, brown sugar, cinnamon, and salt.

Assemble and Bake Cobbler

Preheat Oven
Preheat your oven to 350°F (175°C).

Layer Filling in Baking Dish
Spread the rhubarb filling evenly in a greased 9x13 inch baking dish.

Top with Streusel
Sprinkle the brown sugar streusel evenly over the rhubarb filling.
