Prepare Rhubarb Filling

    In a large mixing bowl, combine the chopped rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss until the rhubarb is well coated.

    Allow the mixture to sit for about 15 minutes to let the rhubarb release its juices.

Make Brown Sugar Streusel

    Mix Dry Ingredients

    In a separate bowl, mix together the all-purpose flour, brown sugar, cinnamon, and salt.

    Add the softened butter to the dry ingredients and use your fingers or a fork to combine until the mixture resembles coarse crumbs.

Assemble and Bake Cobbler
