Prepare the Puff Pastry

Preheat the Oven
Preheat your oven to 400°F (200°C).

Roll out Puff Pastry
On a lightly floured surface, roll out each puff pastry sheet to about 1/8 inch thickness.

Cut into Shapes
Using a cookie cutter or knife, cut each sheet into your desired shapes for the ice cream sandwiches (e.g., circles or squares).

Prepare for Baking
Place the cut-out pastry pieces on a baking sheet lined with parchment paper.

Egg Wash
In a small bowl, whisk the egg and brush it over the puff pastry pieces. Sprinkle with granulated sugar.

Bake
Bake in the preheated oven for about 15-20 minutes, or until golden brown and puffed up. Remove from the oven and allow to cool.
Assemble the Ice Cream Sandwich

Add Olive Oil and Sea Salt
In a small bowl, mix the pistachio ice cream with the extra virgin olive oil and sea salt until well combined.

Scoop Ice Cream
Once the puff pastry pieces are cooled, take one piece and scoop about 1/4 cup of the pistachio ice cream mixture onto the center.

Top with Another Pastry Piece
Place another puff pastry piece on top of the ice cream and gently press down to create a sandwich.

Repeat
Repeat the process until all puff pastry pieces are used and filled with ice cream.

Place the assembled ice cream sandwiches in the freezer for at least 30 minutes to firm up before serving.
