    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Vegetables

    While the pasta is cooking, wash and slice the bell peppers, zucchini, and carrot. Halve the cherry tomatoes and rinse the spinach.

    Make the Garlic Sauce

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

    Add Vegetables

    Add the sliced bell peppers, zucchini, and carrot to the skillet. Sauté for about 5-7 minutes until they are slightly tender.

    Combine with Pasta

    Stir in the cooked pasta, halved cherry tomatoes, and fresh spinach. Pour in the vegetable broth and toss everything together. Cook for an additional 2-3 minutes until the spinach wilts.

    Season and Serve

    Add grated Parmesan cheese, salt, and black pepper to taste. Toss again to combine and serve hot.
