    Prepare the Broccoli Rabe

    Wash the broccoli rabe thoroughly and trim the ends. Blanch it in boiling salted water for about 2-3 minutes until bright green, then drain and set aside.

    Cook the Duck Sausage

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Remove the casing from the duck sausage and crumble it into the skillet. Cook for about 5-7 minutes until browned, stirring occasionally.

    Mince the Garlic

    While the sausage is cooking, peel and mince the garlic cloves.

    Cook the Orecchiette

    In a large pot of salted boiling water, cook the orecchiette pasta according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.

    Combine Ingredients

    In the skillet with the cooked sausage, add the minced garlic and cook for about 1 minute until fragrant. Stir in the blanched broccoli rabe and Calabrian chile paste, mixing well.

    Combine with Pasta

    Add the drained orecchiette to the skillet with the sausage and broccoli rabe. Toss everything together, adding reserved pasta water as needed to create a sauce. Season with salt and black pepper.

Serving

    Plate and Serve

    Serve the orecchiette hot, drizzling with the remaining olive oil. If desired, top with grated Parmesan cheese.
